how do emulsifier molecules able to produce an emulsion that is a stable mixture containing vegetable oil and water?

the emulsifier molecule has a hydrophilic "head" and a hydrophobic "tail". the head can dissolve in water and the tail can bind with the oil molecules which forms a stable suspension of oil droplets in water, or water droplets in oil .
