It's really important to show universities that you are a well-rounded, interesting student that will add value to their university and engage within your chosen program! One way of demonstrating your enthusiasm outside of the classroom is to choose a key area of interest in literature or language or a particular author you may like and give some brief reasons as to why you are so interested.
For example, if you are choosing to study English Literature like I did, it can be really helpful to include some areas of literature that you are interested in outside of lessons and list any books you have read yourself to expand your knowledge in this field. Before I started university I was really interested in American Literature and included a few key authors I had read in my personal statement and explained why I had enjoyed them so much alongside my A-level teaching. This addition to your personal statement can be a really good opportunity to show how your chosen A-level subjects link together, for example I studied History and English Literature and my love of American literature came from studying American history and 20th century literature at school which I then pursued in my own time.
It is also really helpful if you can include any trips you may have taken with your college or school or any events you may have attended such as book clubs or local book launch events, as this will show an autonomous enthusiasm outside of the classroom and present you as an independent learner to your university.
