How should I start writing my personal statement?

You should start with 2-3 short sentences explaining why you want to study the subject. Make it personal but show a real passion. These few sentences give the admissions tutor a true sense of whether you really want to study your subject, and first impressions count! It is absolutely essential that they know that you're a student who has a strong desire to study your subject at university and that they can see that excitement coming through in your writing. Follow this with some experience in your subject (if you have any) to show that you have acted on this interest before. To finish the first paragraph talk about other hobbies and interests (while still showing how this makes you a good candidate) to help the reader get a full view of what kind of character you are.
