What is the function of bile?

Bile is a substance synthesised in the liver and released by the gall bladder. It is released into the small intestine and helps breakdown large fat droplets into smaller ones, via emulsification. This increases the lipid surface area, so that the lipase enzymes have a larger surface area to break down lipids into triglycerides and fatty acids, aiding and increasing the rate of absorption of fat.
