How can temperature affect an enzymes activity?

An enzyme is a biological catalyst. As temperature is raised, the rate of the reaction increases up to the optimum temperature, the point at which the enzyme works the best. Beyond this, raising the temperature causes the rate of the reaction to decrease. This is due to enzyme bonds being broken, which in turn changes the active site of the enzyme and prevents the substrate from binding to the enzyme.
