How many quotes and statistics should I have in the essay

The most important part is making use of the quotes/stats/facts. If you are putting them in without any evaluation then they are wasted they won't have any worth. Your time is precious in the exam so only put quotes or statistics in that benefit your argument or that you can criticise and analyse.
