How should we structure our personal response for Spanish B.

Personal response is the perfect opportunity to express your knowledge and agility to write in Spanish. Many people think the best thing is to be creative and write a story, or a non-common type of text (like an interior monologue). But I always recommend doing a simple text like a letter, or a speech. It must be well structured, with a clear position (thesis) towards the stimulus and arguments to support your opinion.
