For this question you need examples-- a time when you had a lot on and how you coped. You should talk about how you would organise your tasks- such as by making a list and prioritising what you have to do. You should then explain what you do to relieve stress (eg. run) and say you would do that before starting your work. You could also talk about things you do to avoid stress building up
